We are getting our first big snowfall today. Isn’t it pretty? Yeah, it won’t be so pretty by April when it finally goes away. But oh well—I live in the Northwoods. I’m planning on learning cross country skiing this year, so wish me luck on that!
This week, I finished a book (Meatballs, Mistletoe and Murder) and started another one (A Witch Too Dead). I love diving back into each of these worlds every couple of months or so. It’s like visiting with old friends for a couple of weeks.
I’ve been working on making my Thanksgiving menu. It will just be me, my husband, and my seven-year-old. I am going to use my most favorite thing ever to make almost everything: My Instant Pot. This is the one I’ve had and used nearly every day for two years: 6 Quart Duo. In my pot, for Thanksgiving, I’m going to make: Turkey breast, cranberry sauce, stuffing, sweet potato casserole, and mashed potatoes and gravy.
Friends, do you have an Instant Pot? I absolutely don’t think I could live without mine anymore. I make everything from hard-cooked eggs to yogurt to “rotisserie” chicken to cheesecake in that thing! In fact, for my husband’s birthday last week, I made a Layered Pumpkin Cheesecake in it. It was a graham cracker crust, then a layer of cheesecake, then a layer of pumpkin pie, then homemade whipped cream. It was TOO. DIE. FOR. I meant to take a picture for my blog so you could see, but it got eaten too fast. Don’t worry, I’m going to make another one for my birthday in a couple weeks. AND one for Thanksgiving, so I will get some pictures to show you the yumminess.
This is my favorite Instant Pot cookbook: Rootitoot. Ruth “Rootitoot” McCusker is a Canadian grandmother who has spent hours converting her recipes to be Instant Pot friendly, and I haven’t made anything from her cookbook that hasn’t turned out great. She also really goes into how to use the pot and gives all kinds of tips. If you have an Instant Pot and either haven’t gotten anything good out of it or are too afraid to use it, pick up her book and read the entire thing. You’ll be glad you did.
